WEB EXCLUSIVE: Sushi in the River District!

Paragon on State has just announced their new Sushi Bar!

“The Sushi going crowd doesn’t have to travel all the way out to Northeast Rockford anymore,” said Chef Marc Rapp, “We’ll have our grand opening March 1, 5 p.m. here at 205 W. State Street.”

Rapp was the Chef at JMK Nippon for 15 years and left last December to join the Paragon team.

“He asked me for a job, and I said let’s get creative and let you do your own thing,” said Mary Olson, owner of Paragon.

“Our presentation will be more unique than JMK or Shogun,” said Rapp. “There will be similarities, tempura and sushi itself, with comparative pricing. But also look for a more creative side of sushi, rather than just the traditional presentation.

“Look for different flavors and spices. Look for fusion with different cultural cuisines. We’re using larger portions and unusual tableware as well. I’m trying to step it up.

“I’ve been serving our new sushi for about a week now, with a limited menu, and I’m getting a very good response. Some of the things I’m bringing over from JMK, but most of it will be my own, “ Rapp said.

Maybe those Ice Hogs should think twice about moving, with this good news for the River District!
