U of I Extension offers Master Food Preserver certification course

University of Illinois (U of I) Extension-Winnebago County will offer a training course to certify individuals as Master Food Preservers. The series of the Master Food Preserver classes will be from 1 to 4 p.m., March 11 and 25, April 8 and 22, and May 6 at the Winnebago County Extension office, 1925 S. Meridian Road, Rockford.

The hands-on lab sessions will be held from 1 to 5 p.m., June 8 and 22, July 27, and Aug. 10 and 25. The program cost is $175, which includes U of I Master Food Preserver Notebook, food preservation materials, and food used in the lab practical.

To become certified, participants complete five days of educational classes and five hands-on lab sessions. The program will provide instruction about handling and preserving food safely using the latest equipment and techniques. The five units covered in training include Food Safety and Freezing Foods, Canning High-Acid Foods with a Water Bath Canner; Canning Low-Acid Foods with a Pressure Canner; Pickling and Drying Foods; and Jams and Jellies.
