April 10 event: ‘Developing Value-Added Products and Navigating Food Rules’

Teresa Santiago (Teresa’s Fruit & Herbs, Sunny Lane Berry Farm) and Terra Brockman (The Land Connection) will present “Developing Value-Added Products and Navigating Food Rules” from 1:30 to 3:30 p.m., April 10, at Teresa’s Aronia Acres, 1554 County Road 400 North, Congerville, Ill. The event is part of Central Illinois Sustainable Farming Network’s (CI-SFN) 2010 New Farmer Field Days.
Santiago will conduct a tour of her aronia bushes and will talk about how and why she expanded from a fresh-pick-only business to one that also provides value-added products. Participants will also tour Santiago’s fruit and herb farm in Eureka, Ill., where she grows more than 70 different kinds of fruit. Santiago and Brockman will discuss the specific food rules Santiago had to navigate, and the barriers she overcame to provide value-added aronia products to consumers.
